Cook, learn, and enjoy a beautiful, nourishing lunch together on Macleay Island!

Date: Saturday 3rd October
Time: 10am - 2pm
Location: Macleay Island, SEQ
Come cook with me on a beautiful little island just off the coast of Brisbane! Start the day with a relaxing, 20-min ferry ride from Redland Bay Marina to Macleay Island, then the cooking fun will begin!
* If you live on the island, we will send you the venue address when you book in.
** If you’re coming from the mainland, see below for instructions on how to get to Macleay Island. Guests will be added to a WhatsApp group to help coordinate ferry travel and pickups.
In this hands-on class, you’ll learn cooking skills while having fun creating real-food dishes from scratch. Build your confidence with practical techniques like portioning and brining a chicken, basic cheese-making skills, savoury snacks, a vibrant and refreshing probiotic salad, spiced orange sticky chicken with butter sauce, and a decadent (but gut-friendly) chocolate and cherry dessert. You'll definitely want to recreate these dishes at home!
We’ll cook side by side with my support and guidance, learning skills by doing, and then enjoying the results together. You'll also learn to adjust recipes to use what you have or to cater for special diets.
Learn by doing: ask questions, try new cooking techniques, discover gut-healthy recipes your family will love, and enjoy connecting with a group of like-minded people as we finish by sharing a delicious meal together.
MENU:
- Ricotta cheese balls (with ricotta made in the class)
- Spiced orange sticky chicken with butter sauce
- Probiotic rainbow salad
- Layered chocolate cherry dessert glasses
Includes:
- making ricotta cheese
- making ricotta cheese balls for an appetiser
- portioning and dry-brining a raw chicken
- making a spiced orange glaze for the chicken
- making a 'beurre blanc' from the spiced stock after cooking the chicken
- making grain-free seed crackers
- discussing fermented foods, sauerkraut making & using sauerkraut and kraut juice in the probiotic salad
- making grain-free shortbread, dairy-free chocolate mousse & cherry jelly for the dessert (everyone assembles their own dessert)
All dishes are gluten free, grain free, refined sugar free, with possible variations or substitutions for dairy free and nut free. If you have special dietary needs, please let me know and I will do my best to cater for you!
We will use a Thermomix for some dishes but will share conventional methods also. All recipes are supplied to guests after the workshop.
How to get to the venue from the mainland:

Take the passenger ferry (Translink) from Redland Bay Marina to Macleay Island Ferry Terminal. Aim to arrive at the Macleay Island ferry terminal by 9.30-9.45am.
- Departure: Redland Bay Marina, Platform 4
- Duration: about 18 minutes.
- Payment: 50 cents. Tap on and off using a Go Card or your Contactless Credit/Debit Card/Phone (just like the rest of SEQld public transport) or pay while on the ferry.
- Ferry trips leave approx every 20 mins and run from early in the morning to late at night. Check the "Southern Moreton Bay Island Ferry" timetable on the Translink app. - Message in the WhatsApp group to let us know when you're arriving, and you'll be picked up at the ferry terminal on the island. It's a short drive to the workshop, and we'll return you to the terminal afterwards to catch the ferry back to Redlands Bay.
An email will be sent to attendees at time of booking with detailed information, and an invite to join the Whatsapp group. You'll be able to post your questions in the group and we will keep in touch there.
