These beautiful butterfly pea flowers are grown beneath the raspberry canes on my friends Gabi and Michael's farm in Yungaburra, Far North Queensland. Gabi and Michael love working with nature to sustainably grow raspberries and edible flowers, which they then preserve by freeze-drying.
Why freeze-dry flowers?
Freeze-drying helps retain the nutrients, fibre, and vibrant colour in the flowers. They can be stored long-term and used to garnish desserts, decorate cakes, ground into a brilliant blue powder, or brewed into a beautiful herbal tea. The possibilities are endless! What is Blue Tea?
Blue tea is a caffeine-free herbal tisane made by steeping butterfly pea flowers in hot water. The infusion creates a vibrant blue tea with a delicate floral aroma—and a mesmerising colour that changes when the pH is altered!
How to Make Blue Tea:
🦋 Place 1 rounded teaspoon of freeze-dried flowers into a tea strainer in a teapot or large cup.
🦋 Pour over 1 cup of hot water, cover, and steep for 10–15 minutes.
🦋 Enjoy as is, or add flavourings like cinnamon, ginger, lemongrass, or honey.
🦋 Add a squeeze of lemon juice to see the colour shift to vivid purple-pink.
🦋 For iced tea, sweeten to taste, chill, and pour over crushed ice. Serve with lemon wedges.
